Mixed Bean Jambalaya

Mixed Bean Jambalaya

Loaded with flavor and healthy goodness- this easy to prepare dish would be great as a meal or side dish!

  • 1 onion diced
  • 2 stalks celery minced
  • 4 cloves garlic minced
  • 1/2 green pepper diced
  • 1/2 red pepper diced
  • 1 can crushed tomatoes
  • 4 cups vegetable stock
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp sweet paprika
  • 1/2 tsp cayenna pepper
  • 2 bay leaves
  • 2 tbsp Tabasco sauce (adjust to taste)
  • pepper (adjust to taste)
  • 2 cups brown rice
  • 3 cups mixed beans (black beans, chickpeas, white beans, kidney beans)
  • 1 tsp salt (to taste)
  • 1/4 cup parsley fresh
  • 1 green onion chopped (optional)


  1. Heat large pan over medium-high heat. Add oil. Add garlic. Add onion. Saute until soft then add celery, peppers, and splash of water. Saute until everything begins to soften.

  2. Add crushed tomato, vegetable stock, herbs, spices, sauces, and rice. Bring to a boil then reduce heat to low and cover. Allow contents to simmer until the rice is cooked and all liquid is absorbed (about 30 minutes). Watch the pan to ensure rice does not stick.

  3. Stir in the bean mixture and serve with a garnish or fresh parsley and chopped green onion (optional). Enjoy!
