District Dish: Omelette in a Mug

Eggs can easily be made quickly in the microwave; even better an omelet! You can mix and match ingredients that your kids prefer; make it fun. Here is a simple recipe to get you started in the morning.

Omelette in a Mug

Ingredients

  • 2 large eggs
  • 2 tbsp frozen mixed vegetables
  • 1 tbsp low fat shredded cheese
  • salt
  • pepper

Instructions

  1. Spray the inside of a mug with nonstick cooking spray. 
  2. Whisk together 2 large eggs, 2 tablespoons frozen mixed vegetables, 1 tablespoon low-fat shredded cheese, and some salt and pepper. 

  3. Microwave 1 minute.

  4. Stir and microwave 45 seconds to 1 minute more.

  5. Let sit for 1 minute before eating.
