Are you in a hurry in the mornings? The kids still need to have a nutritious breakfast to last them until lunch at school and sugary cereals out the door. Eggs can easily be made quickly in the microwave; even better an omelet! You can mix and match ingredients that your kids prefer; make it fun. Here is a simple recipe to get you started in the morning.
Omelette in a Mug
- 2 large eggs
- 2 tbsp frozen mixed vegetables
- 1 tbsp low fat shredded cheese
Spray the inside of a mug with nonstick cooking spray.
Whisk together 2 large eggs, 2 tablespoons frozen mixed vegetables, 1 tablespoon low-fat shredded cheese, and some salt and pepper.
Microwave 1 minute.
Stir and microwave 45 seconds to 1 minute more.
Let sit for 1 minute before eating.
